ABC Colloquium Goes Underground with the chefs of Punk Royale and Sushi Sho accompanied by Professors Marcia Cavalcante and Pierre Guillet de Monthoux. Guest Curator of the conversation is Dr. Pontus Hedlin, Stockholm University

Punk Royale and Sushi Sho have both made an impact on the restaurant scene in Sweden – each one in its own particular way.

Punk Royale has proven that fine dining can be genuine fun and that an evening out can be an experience where not only the exquisite food leaves you with memories, but where the playfulness, rock'n'roll and a pinch of anarchy also linger long after.

Sushi Sho has gained a well-deserved star in Guide Michelin. This Edomae sushi restaurant works with understatements whose richness in flavor is a constant surprise to the taste buds. The whole restaurant experience is a tribute to how multifaceted minimalism can be. Less is more!

The chefs will share some of the ideas that underlie their food and restaurant philosophy. What are their guiding ideas? What kind of restaurant experience are they aiming to provide us with?

Together with Professors Marcia Cavalcante (philosophy) and Pierre Guillet de Monthoux (management and philosophy) a talk about the aesthetics and other philosophical aspects of dining in general was conducted, as well as Punk Royale and Sushi Sho in particular.
